This simple recipe for sesame shredded chicken is building on the proven methods of the asian cuisine. With help of the pressure cooker chicken stays hydrated and moist yet falls apart with little to no effort. Cucumber are great addition of the freshness.

Ingredients
500 g Chicken Breast(frozen or fresh)
Sauce
1 Green Onion(slices)
...spices
⅛ Ginger Powder
⅛ tsp Granulated Sugar
½ tbsp Sesame Seeds
...liquids
1 tbsp Roasted Sesame Oil
½ tbsp Soy Sauce
½ tbsp Dark Soy Sauce
½ tbsp Shaoxing Wine
¼ tsp Rice Vinegar

½ Cucumber(julienne)
Directions
Cook chicken

- Add 250ml water in to pressure cooker.
- Place frozen chicken on trivet, salt lightly on top.
- Close and pressure cook for 5 minutes on 80kpa with Natural release (18m – 20m).
Preparation

- Meanwhile, cook one cup of rice.
- Mix all sauce ingredients in to small bowl.
- Julienne your cucumber.
Finalize

- After chicken is cooked, check for internal temp (above 165F).
- Place chicken to a bigger bowl and shred it with forks.
- Add sauce to the chicken and mix well.
- Serve chicken in bowls on rice with cucumber on top.
