Homemade French Fries

Freshly made, double fried homemade french fries, can this get any better? If you haven't yet made your own fries you are missing out! I don't thinks so! This is great side dish for Cane's Fired Chicken also don't forget about the Cane's sauce!

Ingredients

 4 potatoes

  • Peel and cut russet potatoes into batons and soak in salted water for 30 minutes.
  • Drain the fries from the water. Pat dry with paper towels.
  • Lower the oil to 300F.
  • In batches, deep fry the fries for 3 minutes. Place on a wire rack.
  • Raise the oil to 400F and fry the fries again for 1-2 minutes or until golden brown.
  • Place into a bowl and immediately season with salt. Place on a wire rack to cool.
