- Knead until dough is soft and springy.

- Cover and rise for ~3 hours under room temperature.
- Afterwards deflate the dough and move to working surface.
- Divide dough in to four equal sized balls.
- Let rest 30 minutes before you shape pizza.

- Blitz down all the sauce ingredients.
- Optionally, cook the sauce briefly on low to slightly thicken.
