This recipe for simple flour Pancakes is common side dish for Peking Duck. In our case we are using it as side-dish for Duck breasts recipe. It's very atypical recipe, dough gets almost fully cooked when you are mixing together flour and hot water.

Ingredients
2 cups All-purpose Flour
1 cup Hot boiling Water
¼ tsp Salt
...for pan and work surface
Sesame Oil
Directions

- Add piping hot water in to the running stand mixer bowl filled with flour and salt.
- Mix until flour has been cooked and is well incorporated with water.
- From dough into a ball and rest for 20 minutes till it’s cooled down.
- Dough is tricky to handle, if it sticks keep it resting for another 20 minutes.
- Split dough into 18 equal balls. Approximately 27g per ball to get nice circle.
- Oil the work-surface with sesame oil. Roll each ball almost paper thin so you can see through.
- Transfer to the medium hot frying pan and cook till slightly gold and brown from both sides.
- Transfer to steaming basket and serve.
