Burger Buns

The hamburger first appeared in the 19th or early 20th century. The modern hamburger was the result of the needs of a society that was changing rapidly as a result of industrialisation and the emergence of the working and middle classes, and the resulting demand for mass-produced, affordable food that could be eaten away from home. Dough
...dry
 463 g All-purpose Flour
 14 g Yeast
 31 g Brown Sugar
 9 g Salt
...wet
 220 g Milk
 1 Large Egg
 41 g Butter
Eggwash
 1 tbsp Water
 1 Whole Egg
 Sesame Seeds

  • Mix all ingredients in stand mixer starting with dry ingredients.
  • Cover the mixer bowl and proof dough for 2 hours.
  • After proving form balls (circa 80g per bun for smaller buns).
  • Proove buns for another hour.
  • Make egg wash (mix water with egg thoroughly) and coat buns.
  • Lastly sprinkle sesame seeds.
  • Bake on 425F / 220C for 12 minutes on conventional baking mode.
